Coconut Oil Shito Sauce Ingredients
- 2 litres of ava coconut oil (depends on the quantity of the sauce)
- 200 g tomato paste
- 2 large onions pureed
- I cup of blended ginger and garlic
- 2 cups blended red scotch bonnet pepper
- Fish powder and broken smoked herrings
- Shrimp powder
- 3 dried bay leaves
- 1 ½ tbsp sea salt
- 1 tablespoon of rosemary spice
- 1 seasoning/stock cubes
How To Make Coconut Oil Shito Sauce
- Heat coconut oil in a saucepan over medium heat, add onion puree, and blended ginger and garlic stir, and let it simmer for about 10 minutes. add the tomato paste, stir, and let it simmer for 15 minutes.
- Pour the blended scotch bonnet pepper into the frying mixture, stir, and let it simmer down for about 15 minutes.
- Add the broken smoked herrings, fish and shrimp powder, stir, add more oil, and let it simmer for 20 minutes
- Add the dried bay leaves, rosemary, seasoning cube(optional) sea salt, and more coconut oil, stir, and let simmer.
- Ava Coconut oil shito sauce is ready to be serve. (can be served with Kenkey, Fried rice, Plain rice, Fried yam, Sweet potatoes etc.)
NOTE; Be consistent with stirring the sauce to prevent it from burning which gives it a bad taste.
