Coconut Pancakes Ingredients

  • 2 cups of all-purpose flour (can be substituted with coconut flour)
  • Sugar (to suit your taste)
  • ¼ tablespoon salt
  • 1 tablespoon baking powder
  • ½ cup full cream milk (can be substituted with a tin of evaporated milk of coconut milk)
  • 1 tablespoon vanilla extract
  • 1 tablespoon melted butter
  • 1 tablespoon coconut extract (optional)
  • Half pack of Ava Coconuttys or shredded sweetened coconut food
  • 2 eggs
  • 1 tablespoon of Ava coconut oil (to grease the pan)

How To Make Coconut Pancakes

  1. Sieve flour into a bigger bowl, Add sugar, baking powder and salt. Mix thoroughly with a whisk and set aside.
  2. In a different bowl, crack eggs and whisk till it becomes foamy, then add milk, melted butter, vanilla and coconut extract to the foamy eggs. Mix well.
  3. Combine the dry mixture (step 1) with the liquid mixture (step 2) and add water. Mix into a smooth batter. (the thickness of the pancakes depends on the quantity of water added)
  4. Add our Ava Coconuttys (shredded sweetened coconut food) to the batter and combine.
  5. On low heat, grease frying pan with Ava Coconut oil and use a ladle to scoop the batter into the frying pan.
  6. Allow to cook for about a minute before taking the pancake off from the pan.
  7. Repeat process until batter is FINISHED. Serve with tea or any beverage of your choice.
 EXCITING FACT: These pancakes Can be topped with fruits such as grapes, strawberrys, banana, kiwis etc.
Honey, chocolate or caramel syrups and powdered sugar (optional)can also be added to it.

NOTE; When pancake begin to form small bubbles on fire do not flip over yet, rather, wait for the surface of the entire pancake batter to bubble up before flipping.
